INGREDIENTS
- 4 medjool dates
- 1 cup ground almonds
- 1/2 cup shredded coconut
- 1/3 cup coconut oil
- 1/3 cup cacao powder
- 1/3 cup pistachios
- 1/4 cup almonds
- 1 tbsp chia seeds
INSTRUCTIONS
- Remove the date seeds, and soak in hot water for 1 hour
- Soak and soften the almonds in hot water for 4 hours
- Blend the dates, ground almonds, almonds, half of the pistachios, shredded coconut, coconut oil, cacao and chia together
- Let the mix stand for a few minutes to allow the chia to soften
- Crush the remaining pistachios
- Divide the raw mixture into 12 rolled balls
- Roll and coat each ball in the crushed pistachios
- Refrigerate
