Serves 4

Ingredients

4 cod fillets or steaks
Himalayan salt and pepper to taste
3 tbsp coconut oil
2 tsp minced garlic
½ tbsp paprika powder
1 small organic red onion (sliced)
1 organic sweet pepper (yellow or red, thinly sliced)
2 organic spring onions (thinly sliced)
1 organic unwaxed lemon (zested and sliced)
1 tsp cayenne pepper (optional)

Instructions

1. Preheat the oven to 200ºC and use some coconut oil to coat a baking dish. Season both sides of the cod with salt and pepper and set aside.
2. In a small pan, heat the coconut oil, minced garlic, paprika and cayenne pepper over a medium heat for about one minute, then set aside for five minutes before adding the lemon juice to the mixture.
3. 
Brush the cod with the spice mixture, making sure it’s all covered, before adding to the baking dish. Top off with the sliced onions and peppers.
4. Bake for about 20-30 minutes, depending on the thickness of the cod and your preferred doneness. When the thickest part of cod is easily flaked off with a fork, then it’s ready.
5. Garnish immediately with a slice of lemon, then serve with a side salad and some steamed rice — and enjoy!!!
