A delicious warming bowl of lentils seasoned with smoked paprika, cumin, coriander, hot pepper flakes, then mellowed out with creamy coconut milk.

INGREDIENTS
- 2 tbsp coconut oil
- ½ onion finely chopped
- 3 garlic cloves finely chopped
- 2 celery stalks chopped
- 2 carrots chopped
- 1½ tsp smoked paprika
- 1½ tsp cumin
- ½ tsp coriander
- 4 cups vegetable stock
- 4 cups water
- 2 cups red lentils
- ¼ cup tomato paste
- 1-2 tbsp fresh lemon juice
- ⅓ cup full-fat coconut milk
- Sea salt and pepper
- Pinch crushed red pepper flakes
- Fresh coriander to garnish
INSTRUCTIONS
- Melt coconut oil in a large saucepan
- Add onion and sauté until soft
- Add garlic and sauté until soft
- Add celery, carrots, paprika, cumin, and coriander
- Sauté 5 mins
- Add stock, water, lentils and tomato paste
- Bring to boil, reduce heat, simmer for approx. 30-45 mins
- Stir in lemon juice and coconut milk
- Season with sea salt and pepper
- Top with red pepper flakes and coriander
- Serve and enjoy
