Summer is officially nearly here and that means delicious nutritious salads.
Don’t stick with the same old boring iceberg lettuce salad – why not try something new? Summer is great time to experiment with an array of new colourful and nutritious salad ingredients. I always tell my clients to “eat a rainbow” as different colours give you the variety of diffrent nutrients your body needs to stay healthy and fight off those cravings . This is one of my favourite quick, easy and totally delicious salads…..
It’s rammed full of plant protein and nutrients so will leave you feeling fuller for longer and will help prevent those cravings.
The sweetness of the mangoes paired with the more savoury flavours of quinoa and tamari are a match made in heaven. The avocado which is rich in good fats adds a creaminess to the salad. The lemon which is rich in vitamin C and B vitamins adds that lovely tang and the pomegranates are packed with antioxidants and potassium and add a subtle, sweet crunchiness.
This recipe serves 2 and is super quick to throw together. Give it a try and let me know what you think.
INGREDIENTS
- 120g quinoa
• 1 mango
• 1 avocado
• 4 tbsp sesame seeds
• 100g pomegranates
• 1 squeezed lemon
• 2 tbsp tamari
• Pinch salt & pepper
INSTRUCTIONS
- Cook quinoa, allow to cool
• Peel mango, chop into chunks
• Peel avocado, chop into chunks
• Mix together mango and avocado
• Add sesame seeds, lemon, pomegranates, tamari, salt, pepper
• Add quinoa
Serve and enjoy!
