Just because summer has arrived in full swing, that doesn’t mean you can now let go of all of the healthy habits you’ve now got. Yes, it’s lovely to be invited to picnics in the park, late night BBQ gatherings with friends and family, and letting yourself go wild on holiday, but why undo all the good that you’ve done for yourself to feel as good as you feel today.
It is possible to still have lots of fun this summer, as well as to stick to a healthy eating regime. In fact, why not be the one to offer up a healthier gathering, and introduce your friends and family to a season of nutritional eating that will beat the bloat of the usual BBQ fare?
Here I share with you a summer salad recipe from my friend in health Theresa Fowler, who lost a whopping seven stone when she took back control of what she put into her mouth. You can find her other recipes and read her story by CLICKING HERE.
Some of the nutritional ingredients that are contained in this salad include:
Eggs
Eggs get a bad rap in the press, but they are one of the most nutritious things you can eat. Besides containing essential vitamin D, they also include antioxidants like zeaxanthin and lutein, which protect your eyes and can prevent eye-related diseases. Eggs are also packed with good cholesterol to help protect your heart from bad cholesterol.
Nutritional Yeast
Nutritional yeast contains vitamin B12, which is something many vegetarians and vegans are deficient in. It also contains all nine essential amino acids, so is a complete protein like those found in animal products. Other benefits of nutritional yeast benefits include boosted immunity, better digestion, and healthier hair, skin and nails.
Quinoa
A great and healthier alternative to rice and pasta, which are refined carbohydrates that can cause you to bloat and pile on the pounds if you have an intolerance or blood sugar problem, quinoa is a superfood from South America that has gained in popularity over the years. It is gluten-free and nutritionally dense in fibre, protein and amino acids.
Quinoa, Broccoli and Egg Salad
Serves: 2
Ingredients:
A combination of baby greens, rocket and/or romaine lettuce
1 courgette, sliced into matchsticks
1 large chopped tomato,
1 small beetroot, shredded
1 boiled egg, chopped
1 head of steamed broccoli florets
2tbsp of nutritional yeast
1 cup cooked quinoa
Optional:
Poached salmon steak, flaked
Pumpkin seeds, toasted
Directions:
Combine all ingredients in a large bowl and mix. Add a drizzle of extra virgin olive
oil and balsamic or apple cider vinegar for a delicious and nutritious meal.

And make sure that the greens you decide to use are organic or locally grown. This is because the normal lettuce that you can buy at the supermarket is grown with tons of pesticides, which will cause your body’s fat cells to hold onto more toxins, thus defeating the purpose of eating a clean and nutritious salad. Most good supermarkets these days, including some branches of Lidl, provide organic lettuce and greens.
