Do you love summer salads that are brimming with texture and crunch? Well, this creamy salad, which will only take 15 minutes to make, is an absolute showstopper and features fresh broccoli florets and crisp cucumber pieces.

In order to get the best taste and nutrition from this salad, make sure that all the ingredients are organic. What’s more, there’s only six ingredients to put together, some of which you may already have in your fridge! You can add this salad to your list of healthy recipes that taste great and are rammed with an array of nutrients to keep you feeling fuller for longer.

Ingredients

  • 1 organic English cucumber
  • 300g of organic cherry tomatoes
  • 1 medium-sized head of organic broccoli
  • 3 organic spring onions
  • 250g organic Greek-style yogurt, such as Yeo Valley (sold in most big supermarkets) or if you want it dairy free, then use organic coconut milk yogurt, such as Cocos
  • 1tsp Himalayan or Celtic sea salt (adjust to taste)

Directions

Wash the broccoli thoroughly. Chop off the florets from the stalk and break into small pieces, before chopping the stalk into smaller pieces. If you decide to blanch the broccoli, then do this now.

Next, cut the cherry tomatoes in half pieces and chop the spring onions into bite-sized chunks, then add them to the broccoli in a large bowl. Slice the cucumber, then cut into quarter pieces before adding to the other ingredients. Finally, add the Greek-style yogurt and salt (to taste) before mixing it all together.

And voila, you have a healthy side dish for dinner — or you can even have it on its own for lunch — in a matter of minutes.
