Vegetable and Turkey Stir-fry with Cauliflower Rice

Got leftover Christmas turkey and not sure what to do with it? Skip the heavy casseroles and turn your festive leftovers into a healthy, vibrant dish with this delicious recipe favourite of mine. Packed with lean protein and colourful veggies, this dish is light on the tummy, east to make and perfect for easing back into your healthier habits after the holidays.

So, whether you’re looking for a low-carb dinner option for the family after all of those roasties or just a nutritious way to transform your leftovers, this stir-fry will leave you feeling satisfied without the post-Christmas gut guilt.

Ingredients (serves 4)

200g cooked turkey, shredded or diced
2 tablespoons of coconut oil
2 garlic cloves, minced
1-inch piece of ginger, minced or grated
1 organic red pepper, thinly sliced
1 organic green pepper, thinly sliced
1 organic carrot, julienned or thinly sliced
1 head of organic broccoli, stalks and florets finely chopped
2 stalks of organic celery
1 large organic onion
2-3 tablespoons organic tamari sauce
Chopped chives or coriander (optional garnish)

Cauliflower rice:
1 head cauliflower, grated or pre-riced
1 tablespoon coconut oil
Salt and pepper to taste

Instructions:

1. Prepare the cauliflower rice by heating the coconut oil in a frying pan over a medium heat. Add the grated cauliflower, season with salt and pepper, then sauté for 4-5 minutes until tender. Set aside and keep warm.

2. Next, heat 2 tablespoons of coconut oil in a large wok or deep frying pan over a medium-high heat. Add the garlic, ginger, celery and onion, stirring for about 30 seconds until fragrant. Add the rest of the vegetables and stir-fry for 3-4 minutes until slightly tender before adding the shredded turkey. Stir well.

3. Drizzle in the tamari and stir in to coat everything evenly. Cook for an additional 2-3 minutes until the turkey is heated through and the vegetables are tender, but still crisp.

4. Spoon the turkey and vegetable stir-fry over the cauliflower rice and garnish with the chives and/or coriander, if desired.

This delicious dinner is healthy, because turkey is a lean, high protein that’s also low in fat, the vegetables add fibre, vitamins and antioxidants, and the cauliflower rice is a great low-carb alternative to traditional rice, giving you a nutrient-rich alternative to the gut-busting Christmas dinners of the past week.
