Sweet fruit and cheese together? Have you gone crazy, Gaynor? Although this combination of flavours is something that you may never have thought of before, I know that if you’re a fan of watermelon, then you should definitely give this delicious summer salad a try.

Why? Because it’s bursting with flavour and is so simple to make. Plus, it’s great for bringing to a BBQ and will leave eaters craving for more!!!

If you want to make sure that you don’t end up with a tasteless watermelon, then look for either grey or brown spots and what look like veiny lines on the rind, which are signs that you’ve chosen a sweet watermelon — these blemishes indicate where the sugar has been seeping out. Also, make sure that the watermelon that you choose is firm and looks kind of dull, because a shiny one indicates that it’s unripened.

Ingredients

  • 1 chilled medium-sized watermelon, chopped into cubes
  • 50g organic rocket leaves
  • 1 packet of organic full fat Greek feta cheese, crumbled
  • 1 small red onion, thinly sliced

Dressing

  • 2 tbsp organic balsamic vinegar (or organic apple cider vinegar)
  • 2 tbsp organic extra virgin olive oil
  • Celtic sea salt and fresh black pepper to taste

Instructions

Wash the rocket and make sure that you dry it well in some kitchen towel or a tea towel, then leave it to the side as you cut the watermelon into cubes and add to a large bowl. Next, add the thinly sliced red onion and crumble the feta on top.

In a smaller bowl, whisk the vinegar, olive oil, salt and pepper, before tossing over the other ingredients. Mix well and serve.

You could also swap the rocket for chopped organic little gem or romaine lettuce, although you won’t get the spicy kick that the rocket gives. Sometimes instead of rocket, I’ll add chopped mint leaves or basil to give it a slightly different taste, but still delicious all the same.
